The company uses precision fermentation to produce real egg proteins without the use of animals.<\/p>\n<p>According to EVERY, the egg white has all the functionality of the traditional variety, including whipping and gelling properties. When used in baking, it provides the same height, foam stability, aeration, and texture as animal-derived egg whites. Preorders for US-wide shipping of the macarons begin today via the Chantal Guillon website.<\/p>\n<h2>Growing product range<\/h2>\n<p>Last year, EVERY (then known as Clara Foods) launched its first product, <a href=\"https:\/\/dev.vegconom.de\/usa\/science\/clarafoodspepsin\/\">animal-free pepsin<\/a>. This was followed in October by EVERY <a href=\"https:\/\/dev.vegconom.de\/usa\/company-news\/san-franciscos-clara-foods-rebrands-as-the-every-company-launches-worlds-first-vegan-egg-protein\/\">ClearEgg<\/a>, which the company claimed was the world&#8217;s first animal-free soluble egg protein. Then, a few months later, EVERY <a href=\"https:\/\/dev.vegconom.de\/usa\/investments-finance\/the-every-company-announces-175m\/\">secured $175 million<\/a> in its Series C round, bringing the total amount it has raised to $233 million.
