This GRAS status allows AQUA Cultured Foods to sell its products in the United States.<\/span><\/p>\n<h2><strong>Cellulose-based alt seafood<\/strong><\/h2>\n<p><span style=\"font-weight: 400\">AQUA\u2019s fish-free seafood, which includes tuna and scallops, is primarily composed of cellulose grown through biomass fermentation. This method allows the products to closely replicate the texture and appearance of traditional seafood. <\/span><\/p>\n<p><span style=\"font-weight: 400\">The company\u2019s offerings are clean-label, consisting of minimal ingredients. AQUA&#8217;s scallops are made from water, cellulose, and plant-derived flavors designed to mimic the oceanic notes of real scallops. AQUA&#8217;s tuna includes a natural beet-derived color to match the appearance of fresh Ahi or <a href=\"https:\/\/cultivated-x.com\/seafood\/wanda-fish-cultivated-bluefin-tuna-toro-sashimi\/\" target=\"_blank\" rel=\"noopener\">Bluefin tuna<\/a>. Fermentation-enabled meat brands like <a href=\"https:\/\/dev.vegconom.de\/usa\/organisations-and-brands\/meati-foods\/\">Meati<\/a> and <a href=\"https:\/\/dev.vegconom.de\/usa\/organisations-and-brands\/chunk-foods\/\">Chunk Foods<\/a> have already taken off\u2014we\u2019re excited to bring that momentum to seafood.&#8221;<\/span><\/p>\n<h2><strong>Product refinement<\/strong><\/h2>\n<p><span style=\"font-weight: 400\">The company began public tastings of its alternative tuna, scallops, and shrimp early last year at its headquarters in Chicago. Michelin-starred chef Laurent Manrique later <a href=\"https:\/\/cultivated-x.com\/company-news\/chef-manrique-joins-aqua-cultured-foods\/\" target=\"_blank\" rel=\"noopener\">joined as a culinary advisor<\/a> to refine the products&#8217; taste, texture, color, and appeal.<\/span><\/p>\n<p><span style=\"font-weight: 400\">In March, AQUA Cultured Foods <a href=\"https:\/\/cultivated-x.com\/fermentation\/aqua-cultured-ginkgo-bioworks-collab-sushi-grade-fermented-alt-seafood-large-scale\/\" target=\"_blank\" rel=\"noopener\">partnered with biotech company Gingko Bioworks<\/a> to optimize and fine-tune its strains, enhancing production efficiency and enabling the company to scale up operations. The products will be offered at a lower cost compared to traditional raw tuna and scallops.<\/span><\/p>\n<p><span style=\"font-weight: 400\"> &#8220;AQUA\u2019s products not only match the taste and texture of traditional seafood but will be sold at or below price parity (depending on region and species) to raw seafood at wholesale.
